After three years in Paris, where she earned her diploma as a Sales Manager, Gwénola BOSSON quickly progressed in her career. Starting as an apprentice and moving up to Sales Manager, she soon became the manager of a bakery.
She then continued her professional journey near Nantes, managing an artisan bakery and pastry shop for eight years. This comprehensive experience gave her a 360 degree understanding of how an artisan bakery business operates, from production to retail management.
A new challenge: supporting artisan bakery businesses
For the past four years, Gwénola has been part of the ACTE team, the department dedicated to Supporting the Creation, Transfer and Expansion of Artisan Bakeries.
Today, she supports bakery entrepreneurs through the key stages of opening a shop: administrative and banking requirements, HACCP regulations, internal organization, merchandising and product range preparation.
Her diverse and hands-on background enables her to guide future bakery owners with pragmatism, high standards and a deep understanding of day-to-day operations.

At Atelier m’alice, Gwénola offers two complementary training programs for bakery professionals.
The first, “Fundamentals of Sales in Artisan Bakeries”, is designed for shop teams and covers customer service, advisory selling, product knowledge and order taking.
The second program, “Sales Manager”, is tailored for managers and focuses on shop and team leadership, workflow organization, merchandising, regulatory compliance and performance management.
These training programs provide participants with practical tools to optimize their retail space and strengthen their sales and management skills.
